Almond Milk Jello Diet info/Allergen info: SCD(Specific Carb Diet Food) - Gluten-free, Grain-free, Lactose-Free, Vegan, Contains Nuts Tastes Like: Coconut Icecream Recipe (With Preparation details):Soak 1 cup of Almonds for 24 hrs. Grind with water and extract 3 cups of milk. Use 1.5 cup of water to extract the 1st milk. Another cup to extract 2nd and during 3rd round using 0.5 cup, add 3 elaichi and extract the thin milk. Mix 2nd and 3rd together. Add Honey, such that the milk tastes sweet. Add Honey to the 1st milk, such that the 1st milk tastes sweet. (The sweetness should be slightly more than usual, like in a dessert). Heat on low flame, the 2nd and 3rd milk. Don't let the milk boil, as it may split. Occasional stirring will help, even if it appears to split. When it is hot enough, remove from fire. Pour the 1.5 cups of 1st milk in a glass storage container. Sprinkle 3 packets of unflavored Gelatin on the milk and let it sit for few mins. Tips: You would add 1 packet of gelatin per cup of fluid.Add the hot milk on top of this gelatin and mix thoroughly, so that there are no lumps. You should not see any jelly balls or crystals in the milk. Stir well and set in refrigerator(without disturbing) for 3-4 hrs. You can pour into small cups and let it set as well. It tastes like coconut icecream. If the milk was not hot enough, the gelatin may not blend well with the mixture, and as a result, you may see two layers of jello, after it is set - one transparent and other milky.. It is absolutely normal and does not make any difference in taste. Tips & Tricks: You can do the same with coconut milk, or any fruit juice. (For 4 packets of gelatin, you will use 4 cups of fluids/liquids - of the 4 cups, keep 1 cup aside to sprinkle gelatin on and heat the rest of 3 cups. If it is fruit juice, you can bring it to boil. If it is nut milk, it will split or oil will separate at high temperature - be aware of that).

Acorn Squash Patties
Diet info/Allergen info: SCD diet, Gluten-free, Grain-free, Lactose-Free, Contains Eggs Tastes Like: Has a mild sweet taste - like sweet potatoes. Recipe (With Preparation details): This recipe has onions, tomatoes and eggs. If you are on SCD Diet, eliminate ingredients that you have so far not tried. For some, who are beginning with SCD diet, eggs may not set well with their system. Proceed with caution, by including 1 egg in your diet, the first day. If you can't tolerate egg, skip this recipe - Egg holds the squash together. Though the squash tastes like sweet potato, it does not hold well, without some binding element.
Cut the squash into two halves. Place in oven, cutside down immersed in 1/4 inch of water + 350F for 35 mins.
Scoop the squash flesh or use a peeler to peel the squash. Saute 1/4 chopped onion, 1/2 green chillies, 1/2 tomato(peeled and deseeded) with little salt. Add this to cooked squash. Add little salt. Let it cool. Add 2 eggs. Mix well.
Heat pan. Add oil. Put the squash mixture and cook at low temp. let it roast well. Flip and cook till it is golden brown.

Banana Pancake Diet info/Allergen info: SCD diet, Gluten-free, Grain-free, Lactose-Free, Contains Eggs Tastes Like: sweet dosa Recipe (With Preparation details):
Mash 3 ripe bananas. Beat 1 egg. Mix them together with very little salt and cinnamon/elaichi powder.
Cook on pan like dosa/pancake on low heat. Cooking for long time with low heat is the key.
If you have trouble with the dosa sticking to pan or breaking very badly - you can pour this batter in a pan and bake for 15-20 mins till it sets, at 350 degrees. And then fry on the pan for toasted taste.

Cauli-Biryani with Raitha.

Grate Raw Cauliflower into grains using grater.
Heat oil and fry mustard, jeera, green chillies, onion and (peeled-deseeded)* tomato with salt. Add this to yogurt and We have Raitha.
In the same pan. Heat oil, add Bay leaves, cinnamon, Annasi poo, minced garlic-ginger, 1-2 greenchillies, 1/2 diced onion, 1 (peeled&deseeded) tomatoes. Cook for a while. Add 1 cup of chopped veggies (chopped mushroom, peas, carrots and beans). After sauteing for a while, add water and cook with salt. Once it is well cooked, remove and keep it aside in a bowl. Make sure that the masala is dry without water.
In the same pan, add oil and cook the grated cauliflower. Once it is semi-cooked, add the masala and cook till the raw smell is gone. Balance the salt. Serve with raitha.
The cauliflower granules provide the grain-texture for the biriyani. Of the masala, you have cooked, probably you will use only 2-3 tbsp for 1/2 cauliflower. Store the masala and use it in other recipes or to make biriyani in an instant.

Beat 2 eggs with 3-4 tsps cashew paste and little bit salt. beat very well, till you see air bubbles. Heat Pan with little bit of oil. The Pan should not be very hot or cold. Pour half the egg mixture and spread it very thin. Set the temp to very low and let it cook. When cooked, flip and cook for few more secs. Remove from fire and cut into thin strips using pizza cutter. Repeat for the remaining half of egg mixture. Heat Pan with oil and add the biriyani masala. When it is hot enough, add the egg noodles and toss and mix well. Let it cook for fews min. Soak 1 cup cashew for 8 hrs. Grind urad-cashew into thick smooth paste with little salt. Prepare Spinach Kadi*, Fry on Pan like very-small dosas or pancakes. Press and flatten to make sure that the batter gets cooked at th center - the pancake swells up quickly and leaves the center uncooked. Drop it into Spinach Kadi. Urad Dal-Cashew Dosa with Cashew Chutney

Soak 2 cups Urad dal for 24 hrs - change water every 8 hrs. Soak 1 cup cashew for 8 hrs. Grind urad-cashew into thick smooth paste with little salt.
Pour on pan like a crepe and cook like a Dosa. If you can tolerate onions - saute some diced onions and add to this batter before making dosas.
Serve with Cashew Chutney.
Cashew Chutney Soak Cashews for 6-8 hrs. Saute Green chillies & garlic and grind it with soaked cashew and salt.

Peas CurryDiet info/Allergen info: SCD(Specific Carb Diet Food) - Gluten-free, Grain-free, Lactose-Free, Vegan, Tastes Like: Masala Curry Recipe (With Preparation details): Cook Peas with some water. (*)Fry garlic, ginger, onion, green chillies and bay leaves Remove Bay leaves. Grind 1/2 of cooked peas and the mixture from (*). Heat butter, add the ground mixture. Cook for a while with turmeric powder. Add the remaining peas and cook for a while, till the raw smell is gone. Peas curry can be served as main course or as dip for Uraddal-Cashew Patties

Lactose Free Tea Soak Almonds for 24 hours. Extract milk by grinding and squeezing the milk out of it. It should be in 2%milk consistency - not too thick, not too thin.
Heat a pan and add 1.5 Cup of almond milk, tea powder/leaves, and 3-4 Cardamoms. Heat this in very low heat. When the color turns to tea light-brown color, turn off the heat. Serve with honey.
Almond milk tastes better with tea than with coffee. You can use this to make chocolate milk, if you tolerate Cocoa - However, Cocoa is illegal in SCD.

SCD Kesari Lactose Free, Grain free, Vegan, SCD-Legal Contains Nuts.
Melt 2 tbsp butter. Add chopped(soaked) cashews. Add 1/2 cup Almond flour. Roast for few mins. Add 1 chopped banana, 2-3 cardamom or 1/2 tsp cardamom powder or vanilla essence, 1 cup Almond/Cashew milk(preferred) or water. Let it cook for a while, till it becomes an even paste-like consistency. Add Honey to taste. Let it cook for few mins and remove from fire.

Banana-Cashew Pudding SCD Legal, Lactose Free, Grain Free, Vegan, Contains Nuts
Soak 1 Cup Cashew overnight. In the morning, drain and wipe well with paper towel. Set Aside for few mins on paper towel. Grind it into dry paste. Mash 3 whole very ripe bananas. Heat 2 tbsp butter, add cashew paste. Mix for few seconds. Add Mashed banana and 1 tsp vanilla essence/elaichi powder. Mix well and cook for few mins. Add 1 cup water and let it cook. When the water is absorbed, add honey to taste. Let it cook for few mins and Serve hot/cold.
For Ripe bananas, I nuke Frozen bananas and use them in this recipe. I let the banana get ripe(lots of black spots on the peel). Then put the peeled bananas in a Ziploc and freeze them. These can be used to make smoothies and for cooking like above, just microwave them for few mins till they are soft and use them.
