Appam
It is fermented pancake made out of Rice and Coconut,
Prepare Kurukku by adding 2 tbsp Rava/semolina to 2 Cups of water. Boil and stir constantly till it becomes a thick paste.
Add 1 tsp yeast, 2 tsp sugar to 1/2 cup lukewarm water. Let it rise.
Mix 2 cups Rice Flour, 3 tbsp Sugar, Kurukku(at room temp), yeast, 1/2 cup coconut milk, salt to taste. Add water and whisk to make a thick batter.
Let this ferment for 8 hrs.
The batter consistency should be like Idly batter. If it is very thick, add some coconut milk. If you like sweet appam, add sugar to the batter. Pour batter on hot girdle or pan like thick pancakes.
Serve with coconut milk or Khurma.

Pazham Puzhungiyathu
Cut a ripe plantain with the peel into 4 pieces and steam for 15 mins. The peel will turn black.
Peel and Cut the steamed pieces into thin rounds. Mix ghee and sugar/honey in a bowl. Toss these steamed pieces in ghee mixture and serve with Pappadum. The sweet and salt combo is just sooo mouthwatering. Have fun :-)

Can anyone tell me where to get Nendra plantain of Kerala in US? I want to steam and taste. Have heard so much from keralites about this banana but never got a chance to taste it even once.

Actually, we use plantains available in walmart for the dish above.
